Potato is the underground part of the stem that has thickened. This part of the stem is called a tuber.
Even though the part of the potato we eat grows inside the ground, it is not the root of the plant, but a tuber(the underground part of the stem).
Whereas,Sweet potato is a root tuber because these are adventitious roots that become thick and fleshy due to storage of food and are swollen without any definite shape.
Other than this , Potato shows nodes and internodes whish is a characteristic of stem but nodes and internodes are absent in case of sweet potato.
Hope it helps
