A packet of chips is vulnerable to getting squished. Squished chips are subpar. You could put the chips in a solid container that resists squishing, but that makes the package bulky and expensive.

Gases provide good protection from breakage and the air is a very common gas.

Remember that a lot of packaging is either bubbles of air (bubble wrap) or or foamy soft shapes.( air trapped in a solid).

The problem with air is that it contains oxygen. Oxygen however, is chemically corrosive, and will cause the chips to spoil quickly.

Also,the cushion of nitrogen prevents the chips from being crushed while they are transported in bulk from the factory to the stores.
