All plants and animals depend on photosynthesis for supply of food and energy.

It is through photosynthesis that the energy can enter the world of living things.

Although the starch is produced in the leaves and other green parts, storing the starch in the underground parts of the plant like root, underground stem etc protect the food stores from the animals looking for food.

Thus potato which is an underground root is a storehouse of starch.

Answer:

potato is underground stem and so the food made in the leaves gets transported to the the stem where it gets stored in the form of starch.
