Well, yes, there are a few items.
Homemade snacks- mixture, mathri, etc
Poori/Paratha and Aloo (in any form and in any way, it will work)
Poori/Paratha and Pickle (Pickles will last long, of course)
Any stuffed poori/paratha (stuffed items usually last longer)
PS: Potatoes could get spoiled in hot and humid places, especially if one is not travelling in an AC coach.
However, an even better and a more trusted option is to step out at some really good junction/station and look for these.
Fruits, especially fresh ones
Vegetables (they might even peel and cut and slice them)
Some common snacks like chaat, dahi vada, bhel puri, etc.
Tea/ Coffee
Some cool refreshments
Local delicacies, like Idli-Chutney at a South-Indian station, or Rabdi at a North-Indian station
PS: The reason why I advise to bring fruits and vegetables from home (you could, though) is because you never know how delayed the train could be and how spoiled the fruits and veggies could become. So, it’s better to buy them on spot.
