bcz the water present inside the pressure cooker converts into vapor (gaseous state) & increases the pressure bcz gas have very loosely packed intermolecular space .

& hence we know that increase in pressure results in increase in heat (more than that of cooking in other utensils hence it cooks rice faster than .

Pressure is created by boiling a liquid such as water or broth, inside the closed cooker pressure. The trapped steam increases the internal pressure and allows to rise the temperature.
