In hilly areas the atmospheric pressure is low. Therefore the boiling point of water is low or we can say its vapour pressure is high. So, it boils at lower temperature than usual. So, pressure cookers are used in hilly areas as they reduce the vapour pressure of water or we can say that the boiling point of water is increased. Therefore, the food is cooked properly.

In hill stations atmospheric pressure is low. So water will boil below 100°c . Therefor cooking is difficult. In pressure cooker boiling point is greater than 100°c because of low pressure .
