Crush sugarcane to extract the juice.In the process of crushing break up the hard nodes of the cane & flatten the stems.Collect the juice,filter, & then boil to drive off the excess water.The dried cane residue which is also known as bagasse is often used as fuel for this process.The remaining liquid is allowed to set into a solid mass known as jaggery,gur,chancaca/panela.
