Potassium bisulphite is a food additive that inhibits bacterial growth, yeast and mold growth in food substances. It also helps in preventing discoloration.
When potassium bisulphate dissolves in water, it forms a sulfurous acid which lowers the pH of the food and inhibits growth of organisms. It is usually used even in dried fruits and dehydrated vegetables to prevent discoloration and browning.
However, it is important that people with sulphite sensitivity react adversely to potassium bisulphate. This may cause symptoms of asthma-like difficulty or shortness of breath, wheezing etc. A few cases of anaphylaxis have also been recorded.
