look we know that v is final velocity and u is initial velocity so v and u have some magnitude means they have some value like suppose
v = 2m/s and u = 1 m/s
so when you subtract (v-u ) so here magnitudinal value will be cancel out I.e, (2-1) m/s is unit it can't be cancel out it will remain same
that's why SI unit of acceleration is m/s²
