Pyruvate is converted into lactic acid in the presence of deficit oxygen​ by fermentation.

  • At the end of the process of glycolysis, two molecules of pyruvate are formed. In the presence of oxygen, these molecules enter the Citric Acid cycle.
  • When there is a deficit or lack of oxygen, organisms like bacteria follow the process of anaerobic respiration or the breakdown of pyruvic acid(or pyruvate) into lactic acid.
  • The above process is known as lactic acid fermentation. It is commonly seen in Lactobacillus which results in the curdling of milk. Another example is the formation of lactic acid in muscles which causes fatigue.
