It is because the oil containing food is oxidised by oxygen when it is
left for a long time and forms some products which gives unpleasant smell and bad odour.
The reason for this is RANCIDITY.
PREVENTION MEASURES:
Flushing the food container with nitrogen gas.
Adding antioxidants such as BHA,BTA etc.
