Baking soda is a salt that makes food light and fluffy. If you don't have this ingredient at hand, use a baking soda substitute. Without it, your cake won't rise and can turn out flat.

Hope it helps !!

Answer:

baking powder because when baking powder is heated or mixed in water, the following reaction takes place -

NaHCO3 + H+ --->CO2 + H2O + Sodium salt of acid

carbon dioxide produce during the reaction can cause bread or cake to rise making them soft and spongy.
