The pressure cooker works by trapping the steam produced from boiling the cooking liquid inside the vessel. Through retaining this steam in the cooker the internal pressure and temperature rise quickly.
This is different from cooking in the open where the internal pressure and temperature are lower and thus takes longer to cook than when using the pressure cooker.
