You can say water turns into hydrogen and oxygen gas during electrolysis

but this is a chemical reaction, so not exactly a physical change.....

But a liquid needing high pressure to conserve it's state, can turn into gas when pressure is reduced ( for example Carbon Dioxide needs 5.1 atm of pressure to exist as liquid)
