Answer:

When the substance containing oils and fats are exposed to air they get oxidised and become rancid due to which their smell, taste and colour change. This process is known as rancidity.

eg. - when a when butter is kept open for a long time then its smell and taste gets changed.

The deterioration of food stuff when foodie materials come in touch with air it's constituent particles such as oils containing fatty acids get oxidised due to which it loses it smell , fragrance and taste , hence good stuff becomes odourless or sometimes sour in taste , this whole process is named as rancidity, example is :- when kept chapatis are attacked bye fungus, chapatis loses it's taste as well it's quality thus give sour taste, which when eaten bye someone leads to food poisoning .
