It is a chemical change. Also, it is an irreversible change.

How?

For an example : When we cook rice, new substance is formed that is cooked rice. It is also irreversible change i.e we can't change the cooked rice into rice again. Also, physical and chemical properties of substance changes during cooking.

In the final analysis, it is an irreversible and a chemical change.
