the salt used for making crispy pakoras is BAKING SODA. it is a MILD NON CORROSIVE BASE. its chemical name is SODIUM HYDROGEN CARBONATE OR SODIUM BICARBONATE (NaHCO3)

NaCl + H2O +Co2+NH3 --->NH4Cl+ NaHCo3
