Answer --- The Substances whose buildup in the Muscles causes Cramps is Lactic acid.

Reason --- During Intense exercise, there may not ne intense oxygen available to complete the Process of the Respiration. Thus, a substance called Lactate is made. This lactate or lactic acid accumulates in the muscles and thus cause Cramps.
