Raisin and dry apricots swell up when placed in a bowl containing water for some time. This is due to the phenomenon of osmosis. Water travels from a higher water concentration area to a lower water concentration area through osmosis. The raisins and dry apricots have lower water concentration than their surroundings( a bowl of water). So water molecules pass through their cell membrane and they get swollen.
