1. The oxidation of oils and fats present in the food resulting in bad taste and foul smell is called Rancidity.

- filling the packets of eatables with a gas other than oxygen. Example -chips packets are filled with Nitrogen gas.
3. oxidation of ghee takes place on keeping it outside for several days. the taste and colour also change.
