Rancidity is a process used for spoiling of cooked food materials like vegetables,
etc. When kept for long time in open. How can you prevent such process to
proceed? Give an example.

It can be prevented by following methods:
(i)                 The packing of food materials should be replaced the air with Nitrogen.
(ii)               The food materials should be placed at very low temperatures.
(iii)             Addition of antioxidants also prevents rancidity process.

Rancidity can be prevented by-
(a) Adding anti-oxidants to foods containing fats and oils.
(b) Packing fat and oil containing foods in nitrogen gas.
(c) Keping food in refrigerator.
(d) Storing food in air-tight containers.
(e) Storing foods away from light.
