raw vegetables and fruits are kept in refrigerator Where are jams and pickles can be kept outside

raw vegetables is not preserved,so bacteria can infect them quickly and cold environment resist it...
But jam and pickles are already preserved by some processes,,,so not for long time but for sometime it has no need to keep in refrigerator..But you can not keep both for long time

the high sugars or salts can absorb more water, so they increase osmotic pressure and kills the microorganisms by precipitation of protiens in them, so they can be preserve outside as they r not prone to microorganisms
whereas raw vegetables will become prone to microorganisms so they prevent by storin in very cold or hot temperature where microorganisms can't grow
