Raw vegetables and fruits are kept in refrigerators, whereas jams and pickles can be kept outside.​

Answer:

The microorganism present in the open atmosphere can destroy and spoil the vegetable by attacking on it. Refrigerators work on low temperature which inhibit microorganism from growing. On the other hand jams and pickles contain sugar and salt as preservatives respectively  which saves them from the attack of microorganism and gives them a long shelf life.
