because pickles and jams can prevent germs by their own because of excessive fat, salt and oil etc
but vegetables get infected because of germs so they cant kept outside for longer time.....

raw vegetables and fruits get easily infected by micro organisms and get spoiled. They are kept at low temperature that inhibits the growth of microbes. on the other hand jams and pickles contains sugar and salts as preservatives. these preservatives forms a protective layer and prevent spoilage of these products by inhibiting the growth of various micro organisms.
