Plants appear green to us because the leaves contain a pigment called 'chlorophyll', which absorbs red and blue light and reflects back the green light. Chlorophyll is also a necessary ingredient for photosynthesis. But some plants have red or other colored leaves, so how do they make their food? The fact is, that those plants do contain chlorophyll, it is just that the other pigments, carotinoids and anthocyanins are more than the chlorophyll pigments. Carotinoids absorb blue-green light from the blue light and reflect back yellow or yellow-orange light. The leaves that have these appear that color to us. Anthocyanins absorb blue and green light and the leaves appear red or purplish to us.
