Tomatoes produce lycopene and carotene which turns the tomato red, as it ripens.

 

From green, the tomato changes colour to yellow and then finally it turns red. This gradual change in colour is due to the breakdown of chlorophyll.

 

As a result of the breakdown of chlorophyll, lycopene - the red carotenoid, is synthesised and it is this colour (red) that is seen on ripe tomatoes.
