Regular cooking in vessels open to atmosphere takes long time in mountains. Therefore, cooking in pressure cookers is advised. a) Boiling point of water at STP is 100 degrees Celsius .
As altitude increases, Boiling point of water decreases than its normal Boiling point . So, water boils at low temperature and evaporates.
SO, IF YOU COOk FOOD in open vessels takes longer time for cooking.

b) Principle working of pressure cooker:
Boiling point of water increases with increase in pressure.
Hence in pressure cooker if we cook food , it takes less time .

C) Advantages of using pressure cooker:
1. Reduces time of cooking.
2. Fuel consumption is reduced.
3. Cooks tasty food.
4. Retains all the nutrients in food while cooking.

Boiling point of any liquid increases as the pressure acting over the liquid increases. At higher altitudes, atmospheric pressure is low and thus water boils at temperature lower than

100°C. As a result, the heat provided to open vessel is less, while cooking food for a given period..in a pressure cooker, the pressure is higher than one atmosphere. Due to higher pressure, water.boils at higher temperature than 100°C. Hence more heat is provided for a given time period to cook food and cooking food takes less time. Thus, fuel consumption is less while using pressure cookers to cook food. As it takes less fuel and less time, thus cooking food in pressure cooker is advantageous as compared to cooking in open vessels.
