Ripening of a fruit is mainly a chemical change.  There is perhaps a physical change also.  But that is the result of a chemical change.

The fruit softens up. The color changes. The taste changes. The shape changes a little perhaps..

The starch in the fruit is converted into sugar during ripening. So change in the chemical composition.  Some ethylene is emitted.  The acidic components in the fruit get decomposed. So the fruit has a neutral or sweet taste rather than sour.
