Composition and properties of fruit initially are entirely different than those after ripening of fruit. It cannot be reversed. Hence, it is a chemical change.

Ripening of a fruit is considered to be a chemical change because of the following reasons :
as ripening of fruit is a permanent change and once the fruit has been ripened so after that it cant reverse and chemical changes never reverse they r permanent
there is a change in the mass of fruit after ripening
and most important in chemical changes the composition of the substance changes so as happens in ripening of fruit also.
so due to such reasons ripening of fruit is considered chemical change..
