Ripped fruits do not got rotten in deep freeze because the enzyme that is responsible for conversion of ripen fruit into rotten one don't work on very low temperature . Also the hormone responsible for rotten the fruit ethylene slow down on the low temperature conditions

Deep freezing food (fruits) is a process by which food can be preserved for a very long time .
The reason is that at very high or very low temperature the most of microorganisms , bacteria's are not able to survive .
And in this manner our fruits are saved from ripening.
But there are some fruits which ripens at a great rate when putted in a freezer ( eg. Banana)
But now question is that are that fruits are safe to eat ??

Freezing does not kill most microorganisms, but puts them in a serious state . Frozen fruits may or may not taste as good as fresh, but the difference in nutrition is slight—frozen fruits will still have plenty of vitamins.
