Different plants grow in different surroundings. This is because the plant is suitable for that region. The plant has adaptations which helps it survive in its region. For example, cactus has thorns which protects it from animals. The stem also has a waxy waterproof kind of coating to help retain more water. Long roots also help in absorption of more water.
