because the air pressure is lower in the hilly areas, the water boils at temperature lesser than 100 degree Celsius (for example- at 2000 meters, boiling point is 93 degree). That means the maximum temperature of water is 93 degrees at 2000 meters due to which the food being cooked will not get chance to be cooked in higher temperature. Lower the temperature of the destination, the more it would take to be cooked.
