  • The salivary glands present in the mouth of human beings produce saliva which has a glucose-polymer cleavage enzyme whose function is to digest the starch present in food and is called salivary amylase.
  • The salivary amylase converts the starch into smaller molecules of maltose. The maltose in turn is cleaved by maltase into two glucose molecules.
