Salt is applied on the inner surface of pickle jars and the pickle is covered with oil.Why is this done? ,

this is done to prevent rancidity

We applied salt on the inner wall of jar & store pickles in oil to save pickles from Rancidity.
In which food is oxidised & unpleasant smell can be detected.
