salts acts as a preservative, which prevents the growth of bacteria by forcing the microbes to lose water by osmosis. Hence, salt is applied on the inner surface of pickle jars. pickle is covered with oil as oil acts as preservative. it seals off the air from the item that is being pickled and provides an environment in which microbes cannot grow.
