In the sea of gulab jamuns, jalebis, barfis, malpuas and other sweets and savouries, two Diwali delicacies that always stood out in our home were the deevle and the papri. Both involved long hours of frying at precise temperatures.
While deevle were, as the name suggests, "little lamps" or diyas, made by pressing down the thumb on firm dough, the papri was not, as its name may suggest, little machine-cut crisps of maida that are dunked in yoghurt at chaat shops. Instead, this was the exclusive Diwali snack of the tightly knit Mathur community whose main conceit lay in its cultural sophistication.
