Saturated hydrocarbons are the ones that have only single bonds and are thus easy to break while, unsaturated hydrocarbons have either double and triple bonds which are easy to break.
In saturated hydrocarbons complte combustion of the fuel takes place but in the unsaturated hydrocarbons incomplete combustion takes place.
Hence saturated hydrocarbons give a blue flame while unsaturated hydrocarbons burn with a sooty flame.
