The Manchester of India, is the name given by the famous textile center of the Manchester, which is in the Great Britain to the Ahmedabad it is given because of similarity with the famous cotton textile center of Manchester.
The tag "Manchester of India" is specifically related to textile industry. During the mid-19th century Manchester grew to become the center of Lancashire's cotton industry and was dubbed "Cottonopolis".
You can check the link History of Manchester to know more about Manchester's textile industry.

In India, the first textile industry was founded in Mumbai(1854). Later this spread to Ahmedabad and Kanpur, (founded in 1861 and 1862 respectively).

Coimbatore has recently emerged as the textile backbone of Southern India, with the South Indian Headquarters of National Textile Corporation ( NTC ) being shifted from Bangalore to Coimbatore very recently . That's why the tag is mostly mentioned with Ahmedabad and Kanpur.
