Closures. Buttons, snaps, and zips. Modern clothing makes use of a variety of closures that allows clothing to be fitted very close to the body, but this is a new thing in history. Before the use of a button as a closure, all you could do was ties, so garments had to be very full and gathered in.

Also, fabric was once a fairly precious resource - to process, spin, dye, weave, and sew fabric is very time consuming (I’ve done it). When you pull finished cloth off of the loom, there’s an instinctive drive to cut into it as little as possible, and not lose much yardage to shaping. Because of this many timeless garments are built on rectangular shapes that loosely fit the body - the Greek chiton, toga, Indian sari, S. American ruana, Central American poncho, and Japanese kimono are all examples.
