By soaking the gram, bean and pea seeds overnight, they swell up because of the phenomenon known as osmosis.
Osmosis is a process where there is a net movement of solvent molecules from a range of low concentration to a region of high level through a semipermeable membrane.
Osmosis occurs until the gradient between the 2 solutions vanishes and both the solutions become isotonic.
So by soaking peas or beans which are hypersonic and water being the hypotonic solution, water moves into the bean seeds until both the compartments become isotonic. By osmosis, the seeds swell up by overnight soaking.
