Yes, soaked seeds burst their seed coat, well how?
Plants have a special mechanism which forms seeds with very less water content in them, so as to help them undergo a stage of dormacy (waiting period till the environment is suitable condition.
Before continuing letss understand osmosis.
Osmosis:The movement of water from its higher concentration to its lower concentration,through a semipermiable membrane. (this always happends,a physical law.)
Hence when seeds are kept in water, since the water content/concentration in seed is very less compared to that of water,movement of water into the seed take place through a semipermeable(seed coat) membrane take place.
There is something called as a “water potential” , i.e due to the entry of water into the cell, the volume of cell increases, creating a potential/force on the walls of the seed hence ultimately leads to bursting of the seed coat,
This process was actually used by the plants so as to help them survive poor wheather condition and seed coat burst for the growth of plumule and radicle i.e germination.
