1- The rest of the month we see parts of the daytime side of the Moon, or phases. These eight phases are, in order, new moon, waxing crescent, first quarter, waxing gibbous, full moon, waning gibbous, third quarter and waning crescent. The cycle repeats once a month (every 29.5 days).
2- Well, because the moon is between us and the sun, so there is no light from the sun reaching the surface of the moon that is facing us. The light from the sun is all hitting the other side of the moon, the side we never see. And the light is stopping there. This is called New Moon.
