Sodium and potassium are highly reactive metals. They react with both air and water. When kept in open it readily combines with oxygen present in air to form it's oxide.Similarly it reacts with water or moisture to form sodium hydroxide.

Hence In order to preserve sodium metal,it is kept under kerosene so that neither air nor water may come in contact.
