The reason is as Sodium is an highly reactive element, it is kept under kerosene to prevent it from coming in contact with oxygen and moisture. Because, if it is exposed to moisture, it will react with it and for sodium hydroxide.This is a very strong exothermic reaction where lot of heat is generated..
