White powder is baking powder which is the mixture of baking soda and mild adible acid such as tartaric acid(C4H6O6) when the baking powder is heated following reaction takes place.

2NaHCO3--------) Na2CO3+H2O +CO2

CO2 produced during the reaction causes bread or cake soft and sponge & tartaric neutralize the Na2CO3 which form during reaction.
