  • The Salivary amylase is a enzyme released by the salivary glands found in the buccal cavity. There are three pairs of Salivary amylase. They release Saliva which contains water, salivary amylase, mucous and lysozyme. The Salivary amylase convert the complex carbohydrates into simpler form(maltose). Further in intestine, it is converted into glucose. Hence, Partial digestion of carbohydrates occurs in the mouth.

  • The Salivary amylase acts upon the starch to form Maltose which is a simpler sugar. The mucous lubricated the food and form a bolus.

Thus they are exocrine glands (glands that secrete enzymes) and release their secretions through ducts. There are three pairs of salivary glands that are Parotid, Submandibular/Submaxillary and Sublingual glands.
