The process is called transpiration. Mosses cannot do this trick, which is why they remain small, but larger plants need it to survive.

Desert Plants Having Small leaves and spines are:
Alovera and spine.
As there is Scarcity of water in desert plants cannot survive there.
Therefore they have adpated to that environment.
Small Leaves will reduce the amount of transpiration and spines will not perform transpiration.
Hence, the small amount of water they get, will not be lost by transpiration.
This is how it benefits plants.
