Not many answers so I will jump in with one. Any apple that is not ripe is likely to be sour. Granny Smiths, to use the vernacular, is “tart”, not sour (and by the way make some of the best pies … just as tart cherries win over sweet cherries in baking dishes). I have never tasted a ripe apple that is sour, though you should know there are hundreds or apple cultivars known, many having gone extinct today. My theory is that only the sweet/tart ones are commonly available.
