The role of chalk powder in preparation of glucose from starch is explained below.

The chemical representation of starch is (C₆H₁₀O₅)ₓ and glucose is C₆H₁₂O₆.

Starch is hydrolysed under the presence if certain enzymes to form glucose.

(C₆H₁₀O₅)ₓ + xH₂O  →   xC₆H₁₂O₆

The glycosidic linkage present in the starch molecule is broken down during hydrolysis.

During the conversion of the long polysaccharide chain (in starch) to the monosaccharide (in glucose), chalk powder (CaCO₃) plays an important role.

The starch hydrolysis is catalysed using some percentage of sulphuric acid.

And to neutralise this acidic effect caused by sulphuric acid, we use chalk powder.

The reaction supporting this is shown below.

CaCO₃ +H₂SO₄ →   CaSO₄ + H₂O + CO₂
