starch is a homopolymer of glucose. because the same glucose unit is repeated many times. it has two components amylose and amylopectin

amylopectin has 2000 to 200000 glucose units and is branched component and has alpha1,6 glycosidic linkage

and amylose is unbranched component and has alpha1,4 glycosidic linkage.

starch is a secondary helical structure and these helices can hold i2 molecule which gives blue color.
